Zucchini Fritters & Poached Eggs

This is a delicious breakfast fit for a king that is reasonably easy to make.

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 4 servings

3 zucchinis, grated
1/2 onion, grated
3/4 cup of cooked corn kernels
1/2 cup tasty cheese, grated
3 eggs
1/2 tsp cayenne pepper
pepper & salt
8 eggs

Grate the zucchinis and press the contents between some paper towel. This is to eliminate any moisture and allow your fritters to stay together.
Grate the onion and add it and the zucchini to a bowl.
Grate some tasty cheese and add it and the corn to the mix.
Add the cayenne pepper, eggs & salt and pepper and mix until well combined.

In a frying pan prepare the oil for shallow frying.
Once the oil is hot enough, spoon the mixture into the pan (2-3 tbs of mixture per fritter).

Allow about 3 minutes per side or until golden brown. Make sure there is a bit of a crust on the fritter before flipping to ensure they will stay together.

Do not cook too many at one time as this will lower the temperature of the oil.
When the fritters are ready, drain the oil on a paper towel.
While the last of the fritters are cooking, prepare the eggs.
In a medium saucepan, boil the water.
When it has reached a boil, make a whirlpool motion in the water.
Crack the eggs into the water (2 at a time) and cook.
After 3 minutes (or your desired cooking time for eggs) remove and drain any excess water from the eggs.
To plate up place 2 fritters on the plate and lay the eggs on top.
This dish is also delicious with bacon or ham and fresh salsa.
Serve with aioli or chutney and enjoy.
