These delicious golden egg dumplings are pretty special and they normally make an appearance during festive seasons.
The skin of the dumplings are made of beaten eggs, being cooked into omelette with pork filling inside. They look sophisticated but they taste really light and fluffy.
Pre-make a batch and use them for a light meal or in soup. It is a novel alternative to your usual dumplings.

3 large eggs
200g minced pork
50g green shallots
1/2 teaspoon sesame oil
1 tablespoon oyster sauce
1 tablespoon soy sauce
30g tapicoa starch (aka corn flour)
Olive oil spray, salt and pepper
These egg dumplings are not hard to make but it takes time and patience to make them one by one.
