Golden Pork Egg Dumplings

These delicious golden egg dumplings are pretty special and they normally make an appearance during festive seasons.

The skin of the dumplings are made of beaten eggs, being cooked into omelette with pork filling inside. They look sophisticated but they taste really light and fluffy.

Pre-make a batch and use them for a light meal or in soup. It is a novel alternative to your usual dumplings.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 4 servings

3 large eggs
200g minced pork
50g green shallots
1/2 teaspoon sesame oil
1 tablespoon oyster sauce
1 tablespoon soy sauce
30g tapicoa starch (aka corn flour)
Olive oil spray, salt and pepper

Marinate the pork mince with salt, pepper, sesame oil, oyster sauce, soy sauce and green shallots and stir well until the mince mixture becomes sticky. Set aside.

Add the corn flour with some water and mix well.

Whisk the eggs with some cornstarch mixture.

Spray some cooking oil in a non-stick pan and then turn down to low heat.
Gently ladle 2 tablespoons of beaten egg to the center of the pan.

Add about 1 tablespoon of minced pork mixture to the off-side of the egg wrapper when the egg is about to set.

Seal the egg wrapper into halves before the egg is fully cooked.

When one egg dumpling is made, lay it on the side of the pan until it is cooked inside.

Continue with the process until you finish all the ingredients.
Steam for 10 minutes or until the pork is cooked all the way through.
Serve with chilli soy sauce for dipping.
Alternatively, these egg dumplings are now ready to be added to any hot soup.

These egg dumplings are not hard to make but it takes time and patience to make them one by one.
