Matcha Fudge Protein Bars

These healthy homemade Matcha Fudge Protein Bars are incredibly unique, the most wonderful green and very healthy packed with protein, healthy fats and the goodness of green tea.



These sweet and fudgy treats are surprisingly filling and there is no baking so they are super easy to make.

Preparation Time: 10 minutes
Cooking Time: 1 hour in the freezer
Makes: 18 servings

Ingredients
85g Almond Butter (or nut butter of choice)
1 cup Unsweetened Almond Milk (or "milk" of choice)
1 tsp Stevia Extract
10 drops Lemon Flavor or Almond Flavour
168g Vanilla Protein Powder** (I used SunWarrior)
60g Oat Flour
4 tsp Organic Matcha Powder
1/2 cup Dark Chocolate, melted (optional)

Method
Line an 8 inch baking tray or container with baking paper and set aside.
In a bowl; mix the almond butter, milk, stevia and lemon flavour until combined.
In a separate bowl, whisk together the protein powder, oat flour and matcha powder. Slowly add the wet to the dry.



Mix until the mixture is even, it should have a texture like cookie dough.
Scoop the mixture into the prepared dish and flatten the surface.



Tightly cover the pan with cling wrap and place in the freezer for an hour or refrigerate overnight.

They go darker as they set!


Once set slice the protein bars and either enjoy as they are or drizzle liberally with melted chocolate.
Serve!

Notes:
1. Store in an airtight container in the fridge or freezer. I like to eat them straight from the freezer as they have the texture of an icecream bar!
2.The lemon flavor just enhances the matcha flavor. You can use almond flavor instead too, this step can be omitted.
3. These didn't turn out as green as usual as I ran out of vanilla protein powder and had to swap to chocolate. They are usually much brighter!
4. This recipe is: low fat, low sugar, high fiber, high protein, gluten free and vegan!
