Cassava (tapioca) Root stir fry

Cassava root is called tapioca root in Kerala. This root is cultivated almost all around the world. Cassava root is rich in carbohydrates and dietary fiber.

The root can be prepared in different ways. Here I am sharing an easy recipe. Fish curry makes a great combination for this.

Preparation Time: 12 minutes
Cooking Time: 40 minutes
Makes: 4 servings

4 cups of cassava (tapioca) root cubed
6 cups of water
1/2 cup grated coconut
1 onion chopped
2 green chilli
2 tsp ginger-garlic paste
1 tsp mustard seed
1/2 tsp turmeric powder
2 tbsp coconut oil
Curry leaves
Salt to taste

Peel the skin of the tapioca and cut it into small cubes. Wash it 2 to 3 times in cold water.

Peel and cut the root into small pieces.

Add water and salt into the cubed root and cook in a deep bottom vessel until the roots are soft and well cooked. Drain the cooked root in a colander.

Heat oil in a pan. Crackle the mustard seed. Saute the onion, ginger-garlic paste and green chilli until the onion is soft. Then add the curry leaves and stir well.

Now add the cooked tapioca root and grated coconut into the pan.

Then add turmeric powder and mix well. Cover and cook on a low heat for 2 minutes.

Add cooked root and coconut

Serve hot with fish curry. This can be served as breakfast or as meals.
