This super green quinoa salad with fresh basil is light, refreshing, healthy and super delicious. 3 cups of spinach and rocket mix
1 cup fresh basil leaves
2 tablespoons extra virgin olive oil
Juice of one fresh lemon
1 cup cooked quinoa
1 packed cup of spring greens or sprouts (I used watercress)
1/4 cup shelled lightly chopped pistachios (or almonds)
1/2 red onion
1 tbsp of nigella seeds (optional)
1/4 teaspoon pink salt
1/2 small cucumber
Generous pinch of fresh pepper
NOTE: The nigella seeds are not essential I just think they look beautiful!
