Orange Marmalade Truffles

Chocolate and orange is one of those flavour combinations that people love or hate. I am not a fan of the store bought "jaffa" but I love real chocolate and real orange. This recipe combines beautiful cacao with bitter sweet marmalade that my gran made, add some liqueur and you have the perfect Christmas treat or gift.

Makes: 25 servings

3 cups dark chocolate
1/2 cup heavy soy cream
1/4 cup orange marmalade
2 tablespoons orange liqueur (I used Cointreau)
1 1/2 teaspoons orange zest
1/4 cup cacao powder plus more for dusting

Melt the chocolate with the soy cream over a low heat stirring the whole time - about 8 minutes. Once combined remove from the heat and pour into a bowl, add the marmalade.

Slowly add in the liqueur and cacao powder and stir until combined. Grate in the zest of one orange and leave to firm up in the fridge, about 2 hours.

Yes you can lick the spoon.

Once malleable use a teaspoon to roll into bite sized truffles. Roll in cacao powder and leave in the fridge to set. Roll in more cacao powder before serving if necessary.

These orange marmalade truffles can be made up to 2 days in advance.
Store in an airtight container at room temperature. The orange flavour does diminish a little each day, so they’re best the same day they’re made.
Soy cream can be subbed with cow's cream.
Cacao can be subbed with cocoa.
