This tzaiki is super easy to make, is beautiful and creamy, has fantastic fresh herbs and can accompany a large variety of dishes.
Tofu is a bland flavour and you can't taste it at all in the dish. It just becomes creamy and is the perfect base for herbs.

Juice of one lemon
1 tablespoon white wine vinegar
1⁄2 teaspoon salt
2 -3 garlic cloves
2 tablespoons olive oil
Pepper to taste
2 tablespoon chopped fresh dill
2 tablespoon of chopped fresh mint
