Easy Iced Coffee

I have cut down my coffee intake from about eight a day to one a week, for no other reason than I just stopped craving it. I now only have one if I'm somewhere that does cold drips or pour overs or if I make this icy concoction at home.



This iced coffee is strong, sweet, cool and can be enjoyed with or without icecream. Enjoy.

Preparation Time: 3 minutes
Cooking Time: 0 minutes
Makes: 1 litre of iced coffee

Ingredients
1 tbsp instant coffee (or to taste)
1 tbsp maple syrup (or chocolate for a mocha)
700 mls cold water
100 mls almond milk
1 cup of ice cubes
2 small scoops of So Good icecream (optional)

Method
Place the water, ice, coffee, almond milk every and one scoop of icecream (if using) in a blender and blend on high. Blend until the ice is crushed and the drink becomes frothy.

Pour into a large mason jar and add in the remaining scoop of icecream.

Top with a sprinkling of coffee or chocolate powered and enjoy with a long spoon and a good book.
