Pan Fried Chicken with Lemon and Cayenne Pepper

This is a fresh and tangy chicken dish for those who want something quick and healthy. The chicken has a bit of kick from the cayenne pepper and is delightfully versatile to accompany any side dish. You can also use it as a sandwich filler, with some mayonnaise and lettuce.

Preparation Time: 15 minutes
Cooking Time: 5 minutes
Makes: 4 servings

Ingredients
1 double chicken breast
Juice from half a lemon
1 teaspoon of dried Mediterranean herbs
1 teaspoon of cayenne pepper
2 tablespoons of extra virgin olive oil
Salt and Pepper to taste

Method

Slice the chicken into tenders and marinate in the spices, lemon and oil for 15 minutes, the longer the better.



Fry the chicken up using the oil from the marinade. Turn once until both sides of the chicken tender are golden.This does not take long, and if you want the chicken to remain tender, don't overcook it.



Set the chicken aside to rest and soak up the cooking juices.



Serve up with rice, vegetables or potatoes.
