Carrot Cake Nicecream

This carrot cake nicecream was so, so, so delicious and really tasted like the sweet cake we all love. I topped it with fresh walnuts and sweet coconut flakes for the perfect texture and crunch, my only regret was that I only had two frozen bananas left, so this was smaller then I wanted.

Cooking Time: 0 minutes
Makes: 1 servings

Ingredients
Juice of one carrot
4 frozen bananas
3 medjool dates
1/2 tsp cinnamon
1/2 tsp ground ginger
1 tbsp. shredded coconut
1 handful of walnuts

Method
Juice the carrot and place the juice in the blender with the frozen banana chunks and pitted medjool dates.

Blend on high until a smooth texture is formed. You may need to stop the blades and push everything down a few times.

Once you have a smooth texture scoop the nicecream into a bowl.

Top with the spices, walnuts and coconut and enjoy immediately.
