This is one of my favourite recipes. It is a really easy and yummy one.

This recipe is often in high demand for family parties and barbecues as it is a convenient and delicious finger food when cut into smaller portions.

Place in a lined baking dish or disposable foil tray and bake for approximately 40 minutes or until top is firm and golden brown.

The zucchini slice can be frozen. Once it is cooked and cooled, slice into individual serves and wrap separately in cling film or ziplock bags and place in the freezer. Simply defrost in the microwave for a couple of minutes on high for a hot snack.

This slice is delicious served hot or cold with a side of salad or steamed vegetables.
