Mushroom Soup

Easy, delicious, familiar mushroom soups, with chunky bits and cream. It's autumn in a bowl, yum.

Preparation Time: 5 minutes
Cooking Time: 25 minutes
Makes: 2 servings


1 onion
3 garlic cloves
A punnet of mixed mushrooms (ideally two or three different kinds)
1 cube of vegetable stock
25g of grated cheese
Double cream


Put a deep frying pan on a medium heat with a splash of oil in. Chop the vegetables (I chop a quarter of the mushrooms, tear the other quarter, and keep the rest whole)

Fry the onions, garlic and mushrooms together for about 15 minutes, you want them softened.

Remove about a third of mushrooms and set aside.

Add the vegetable stock and leave to simmer down for 10 minutes.
It should be perfect now, transfer it all to a blender, add the cheese and blitz.

Mushroom, soup, soupa

Serve with a swirl of double cream, and top with the remaining mushrooms.
