Stir-fried Bean Sprout Noodles

Bean sprouts are a nutritional ingredient in Asian cuisine, though it is usually unknown for many how to consume or cook these edible shoots. They are packed with B and C vitamins, as well as minerals, making them more nutritious than the original beans. Stir-frying bean sprouts with other vegetables, sauces and noodles is one way to consume this delicious ingredient.



Preparation Time: 10 minutes
Cooking Time: 20-30 minutes
Makes: 4 servings

Ingredients
250g spaghetti
200g bean sprouts
1 capsicum
1 carrot
1 onion
3 stalks chinese broccoli
4 Tbsp olive oil
1 Tbsp tomato paste
4 Tbsp soy sauce
4 Tbsp sweet chilli sauce or any other stir-fry sauce (I used chilli and garlic sauce instead)
10 cups water
Pinch of salt





Method
Boil spaghetti in approximately 9 cups (2 litres) of water for 10 minutes or until soft.

Whilst waiting for spaghetti to cook, wash vegetables and sprouts thoroughly. Then cut up vegetables in small chunks or in pieces as you desire.

Once spaghetti is cooked, remove from pot and leave to strain from water on the side.



Add oil to the pan and firstly fry onions until golden, then add other vegetables and sprouts and fry for 5-10 minutes on low heat, stirring throughout.





Then, add 1 cup of water, tomato paste, pinch of salt and sauces to the pan, allowing to boil for a few minutes.

Lastly, add spaghetti noodles to stir-fry and stir for a few minutes until all ingredients are combined; you are then ready to serve.
