Mascarpone is a very thick Italian cream cheese, and I had made THIS RECIPE
using this cheese. I had half a packet of this expensive, delicious cheese left over, so I wanted to find a way to use some of it up.
This breakfast or brunch turned out very nice and was a bit different to my normal breakfasts!

: 1 serving
1 or 2 slices thick bread
½ garlic clove, peeled and cut
2 large eggs
Garlic chives (I have these growing, but ordinary chives would work)
Bit of unsalted butter
Up to ¼ cup Mascarpone
Scrambled eggs should be not be as well cooked as mine are here!
