OK - eggs and oysters? Strange combination?
I did not use fresh oysters for this as I wanted the smoked flavour of the tinned ones, and although it sounds weird, these were delicious, and once again a bit different for Sunday breakfast or brunch.

: 1 - 2 servings
2 crumpets - I used wholemeal ones
30 g butter
Bit of cream or milk (optional)
60 g smoked oysters from can, drained
½ tbsp chives, chopped finely
Put this egg mixture on top of the crumpets and serve immediately.
