250g Frozen Raspberries
2 Teaspoons Rice Malt Syrup
1 Teaspoon Lemon Juice
500g Coconut Yoghurt
Fresh Mint Leaves and Chopped Walnuts to Garnish
The raspberry coulis is slightly tart however you can sweeten to personal preference by adding additional rice malt syrup to the mixture.
Raspberry layer followed by yoghurt and muesli, then repeat the layering process with the yoghurt and muesli.
Simple and quick to make and healthy, that's why these Raspberry and Muesli Cups can be enjoyed as a breakfast meal or dessert.
In this recipe, I used Nudie's Coconut Yoghurt
and Bob's Red Mill Gluten Free Muesli
. Some of the larger supermarket chains such as Coles and Woolworths stock the brand otherwise you will be able to find these at any Health Shop.
