Blueberry Chia Nalysnyky

Pronounced: Nah-Less-knee-key (plural) or Nah-Less-knee-k (singular). Ukrainian large, quite thin, pancakes.

Originally, they would be stuffed with sweetened cottage cheese and served with sour cream. In contrast, I offer you a healthier option of filling. No sugar added. All the sweetness comes from frozen blueberries and honey (optional).

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 4

1.5 cup flour, preferably whole-grain
0.25 tsp sea salt
0.5 tsp baking powder
500 ml milk

250 g low fat cottage cheese
0.5 cup Greek yogurt
2 tbsp fresh or frozen blueberries
1.5 tbsp chia seeds
1 tbsp raw honey or maple syrup (optional)

In a medium bowl, mix the ingredients for filling. Put it in the fridge.

Prepare the batter by mixing the ingredients. You might want to use a blender for this. I personally use a large wooden spoon.

Aim for runny consistency of the batter. Not too thick.

Heat the skillet. When itís hot, turn the heat to medium low.

Cook nalysnyky by pouring in one ladle of batter mixture at a time. Once poured onto skillet, make sure it covers the whole area of skillet base.

When the edges start turning brown, flip nalysnyk over. Cook 1-2 mins, and put on a large plate. Repeat for the remaining batter. Stack one on top of another.

Place 2-3 tbsp of filling onto nalysnyk. Spread evenly. Roll nalysnyk over the filling. You can tuck the sides in while rolling to prevent filling from falling out.

Top nalysnyky with raw honey and sesame seeds. Cut into slices. Add some fruits and enjoy!
