Fettucine with Sun Dried Tomatoes and Sunflower Seeds

Sun dried tomato mixed with red wine, a bit of tomato paste and sunflower seeds, make this quite an unusual meal, and a great one for vegetarians!

: 4 as a side, or 2 as a main
2 tbsp sunflower seeds
sun dried tomatoes
¾ tbsp tomato paste
1 clove garlic, crushed
30 ml olive oil
65 ml red wine
Grated Parmesan for garnish (optional)
Boil the fettucine as per packet instructions until just tender. Drain.
Meanwhile toast the sunflower seeds in a wok or similar until they are golden.
Add the tomato strips (if you do not use the same ones I used, you will need to first cut them into strips), tomato paste, garlic and the olive oil.
Cook for a few minutes and then add the red wine, and cook a further 5 minutes.
Stir the tomato sauce into the fettucine.
Serve with grated Parmesan cheese if desired as a main meal with a salad or as an accompaniment.
