When it comes to simple yet delicious recipes, nothing beats oven roasted chickpeas. They are a great snack or a wonderful side dish with a meal. But as I will explain later, this can be simply the start of something bigger, better, more colourful and super delicious.

400g can of chickpeas, drained.
About 1 teaspoon cumin, or to taste
It is also nice to let the chickpeas cool and add them to a salad. The salad below includes roasted chickpeas and capsicum, added to a salad of baby spinach, cherry tomatoes, snow peas and Danish feta.
