Strawberry Mint Cooler

Once upon a time I had an amazing strawberry mint cooler at a cafe. This recipe is my attempt to make it at home. While the result has been quite different it's still lovely and refreshing on a hot day and truly delicious according to all who have tasted it. It's also good at breakfast time. The mixture comes out quite thick so drink it that way if you prefer (makes less servings) or add soda water when serving for more bubbly zing.


Preparation Time: 5 minutes
Cooking Time: 1 minute
Serves: 4

Small punnet of strawberries
6 sprigs of mint
1 tablespoon lime cordial
1 teaspoon lemon zest
small bottle ginger beer
Soda water

Hull the strawberries.


Strip mint leaves from stems, leave a few sprigs intact for serving.

Prepare lemon zest.


Put strawberries, mint, lemon zest, lime cordial and ginger beer into blender.

Mix until well combined. Test the mixture and add a little more lime cordial if it is not sweet enough for your taste.


Pour equal amounts into four glasses and top with soda if serving immediately or

Keep original mixture in the fridge and add some soda water when serving.
