Cucumber Sushi With Soy Chilli Sauce Paleo Style - easy to make and tasty


This Cucumber Sushi With Soy Chilli Sauce is paleo, vegetarian and gluten free and is quick to make. This is a great snack and can be served on platters at barbecues, parties or packed in lunch boxes.

Serves: 4

Ingredients
2 continental cucumbers
1 avocado, finely sliced
1/2 capsicum, finely sliced
1 carrot, finely sliced
Wasabi (if required)
1/4 cup soy sauce
2 birdseye chilli, cut finely

Method
Cut cucumber into 4cm sections. Use a small spoon to remove the centres so that there is a hollow.



Scooping out the cucumber
Hollow out the centre of the cucumber with a spoon and tidy the edges with a knife.



Tips
Meat lovers can include chicken, prawns, smoked salmon, tuna, roast beef or pork.
Include mashed egg.
