Everybody should have a great and quick tomato sauce recipe under their belt. It's great to add to pasta, pizza, beans, on chips or for the base of a fragrant curry or soup. It's easy and fast to make and will save you from buying salt laden and sometimes expensive jars from the store.

: 1 litre
2 tbs olive oil
4 cloves garlic
1 bunch fresh basil
3 x 400 g good-quality diced tinned tomatoes
Pinch of sea salt
Bigger pinch of freshly ground black pepper
Store the sauce in sterilised jars in the fridge for a week or so. Can also be frozen in batches.
Depending on what you are using the sauce for, you may not want to strain it.
