Golden Syrup Honeycomb

My family loves honeycomb but what do you do when you don't have any honey? Use golden syrup instead! It tastes great and the kids still get the thrill of watching it fizz up.

Preparation Time: 2 minutes
Cooking Time: 5 minutes
Serves: 6

100 g sugar
4 tbs golden syrup
1 1/2 tsp bi carb soda

Line a slice tray with baking paper.
Add the sugar and golden syrup to a saucepan and heat over a low heat until they have melted together.
Increase the heat to medium and simmer for 3 minutes until it is the colour of maple syrup.

Sprinkle the bi carb soda across the top of the mixture and whisk it in quickly. The mixture will puff up quickly.
Using a spatula, transfer the mixture from the saucepan to your slice tray.

Let cool completely then smash the honeycomb into pieces and serve.
