Do you buy pancake mixes from the supermarket? What if I told you that it only takes 5 minutes longer to make a stack of pancakes from scratch? Here is a fantastic recipe to make pancakes that are tastier and fluffier than the "just add water" store bought mixes. Get flipping!

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 12

1 cup SR flour
1 cup milk
1 egg
1 tbs sugar
1 tsp salt
1 tsp bi carb soda
butter for frying

Add all ingredients to a bowl and mix well until a batter is formed.
Heat a large frying pan to a medium heat and melt butter over the entire surface. Add the mixture to the pan using a 1/4 cup measure per pancake.

When the pancakes start to bubble on top they are ready to be flipped. Flip and cook for another minute before removing to a plate.

Repeat with remaining mixture.
Serve hot or cold with your choice of toppings.

These pancakes are great for keeping in the fridge or freezer to add to lunch boxes or have as a quick snack.
