Chicken Taco's

Chicken taco's are a delicious and substantial lunch or dinner. It's quick to make and there's no need to buy expensive seasoning packs. Make your own and you can tweak the seasonings to your personal preferences.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2

150 g chicken fillet, sliced thinly
1/2 onion, diced
1/2 red capsicum, sliced thinly
1 tsp paprika
1 tsp cumin
1/4 tsp garlic powder
1 tsp corn flour
1/4 cup water
1 tsp oil
soft tortillas (or home made tortillas)
sour cream
taco sauce

In a frypan, heat oil to medium heat then add the onions and cook for 3-5 minutes until the onions are soft.
Add the chicken to the pan and cook until the chicken is browned.

In a bowl, combine the paprika, cumin, garlic powder and cornflour. Sprinkle the mixture over the chicken.
Add 1/4 cup water to the pan and increase the heat to high. Stir until sauce starts to thicken.
Add the capsicum and cook for 1 minute.

Heat tortillas in microwave for 15 seconds so they are easy to fold, then place your fillings inside and fold the tortilla to keep everything enclosed.
