Double Chocolate Muffins
The only thing better than a chocolate muffin is a double chocolate muffin. The more chocolate the better!

2 1/4 cups SR flour
1/2 cup cocoa powder, sifted
1 cup sugar
3/4 cup chocolate chips
1/2 cup oil
1 tsp vanilla essence
2/3 cup milk
2 eggs, whisked
Preheat the oven to 180C and line a muffin pan with muffin cases.
Place the flour, cocoa, sugar and chocolate in a bowl and stir to combine.
Combine the oil, vanilla, milk and eggs then add to the flour mixture. Mix well.
Spoon the mixture evenly into the 12 muffin cases then bake for 25 minutes.
Stand in the pan for 5 minutes before transferring to a wire rack to cool.
