Cabbage Rice Casserole

This is a tasty side that is healthy and easy to prepare. Try using different kinds of grated vegetables or add some ground beef or bacon.

Preparation Time: 30 minutes
Cooking Time: 60 minutes
Serves: 4 - 6

1/4 green cabbage shredded
1 carrot grated
1 small zucchini grated
1 cup cooked rice
1/2 small brown onion finely diced
2 tablespoons golden syrup
1 egg
3/4 cup milk
1/2 cup cheddar cheese
Pinch nutmeg
20 g butter
White pepper and salt to taste

Grease a 25 cm round baking dish and preheat the oven to 170 degrees.
In a large pan, heat the butter to a medium - high heat. Put in the onion and cabbage and cook until softened, around 5 minutes. Remove from the heat to cool slightly.

In a separate bowl or jug, combine the egg, milk, nutmeg and seasoning, whisk well.
Combine the remaining ingredients with the cabbage mixture in the baking dish.

Pour in the egg mixture and stir to incorporate.
Bake for 50 - 60 minutes, until golden and set.
