Macadamia and Cranberry Cookies

Heaven in a cookie; chewy on the inside with a crisp edge. These are my favourites to eat warm, and they make the perfect gift.
They are quick to make and delicious with macadamias, coconut and cranberries. They are low FODMAP, gluten, lactose and refined sugar free.
Delicious cookies make a great gift
: 6 minutes
: 8 - 10 minutes
1 cup macadamias, unsalted
1/2 cup desiccated coconut
1/2 cup cranberries
1 tbsp vanilla essence
1/4 cup maple syrup
1 tsp baking powder
Preheat oven to 180C. Line 2 baking trays with baking paper.
Blend the macadamias, coconut, vanilla essence and maple syrup for 1 minute.
Scrape down the sides and blend for 2 - 3 minutes until a smooth paste is formed.
Add the cranberries and blend into small pieces.
The blend, scrape, add and blend method makes this dough quickly
Add egg, baking powder and blend until just combined.
Drop teaspoons of the dough 4 cm apart on the baking trays.
Bake for 8 - 10 minutes until golden. Cool on the tray for 5 minutes and transfer to a cooling rack.
Hot out of the oven
