Camembert and Salmon Quiche

This delicious quiche is light and perfect for a midweek meal. Camembert adds a richness and is a great compliment to the salmon.

Preparation Time: 5 minutes
Cooking Time: 45 minutes
Serves: 5-6

210g tin of salmon
4 eggs
cup thickened cream
1 sheet puff pastry
cup grated tasty cheese
50-75 g camembert, diced

Preheat oven to 200 degrees (180 fan forced).
Line a pie dish with baking paper. Defrost puff pastry then gently place over pie dish, pushing into corners.
In a bowl lightly whisk the eggs, cream, salmon, tasty cheese and salt & pepper.

Pour into pie dish.
Dot the cubes of camembert evenly over the top of mix.

Bake for 45 minutes or until a lovely golden brown.
Serve with a light salad or crunchy fries.
