Strawberry And Coconut Yoghurt Ice-cream

Delicious, easy, machine-free ice-cream uses frozen strawberries to make it quickly and to give a fruity swirl when set. The coconut yoghurt makes it taste creamy but with the yoghurt tang.

It is refined sugar, lactose and gluten free and low FODMAP.

Strawberry Coconut Yoghurt Ice-cream
Healthy and delicious ice-cream

Preparation time: 5 minutes
Cooking time: 1 hour freezing time
Makes: 6 serves

500g frozen strawberries
1 cup coconut yoghurt
1 tsp vanilla essence

If you prefer a sweeter ice-cream add
1 frozen banana or 1-2 tbsp maple syrup (optional)

Blend 350g strawberries, yoghurt and vanilla essence until just smooth with a stick blender.

The frozen strawberries allow you to make this ice-cream quickly

Taste and add a sweetener (banana or maple syrup), if desired.
Fill each mould up to the 2/3 mark and push the remaining strawberry pieces into the mixture. Use the stick of the mould to break the pieces into chunks.

Add cut strawberries
Pour the ice-cream into the moulds

Freeze for 1 hour to set. Alternatively serve immediately in a bowl.
