Carrot and Potato Fritters

Carrot and potato fritters are a delicious breakfast, lunch or dinner. You can serve them with a simple salad, as an accompaniment to bacon and eggs or eat them as finger food. They are perfect for lunchboxes and are freezable.

Cooking Time: 15 minutes
Makes: 18

1 cup SR flour
3/4 cup milk
1 egg
2 large carrots, grated
2 potatoes, grated
1 small onion, diced
1 tsp salt
2 tbs oil

In a large mixing bowl, mix together the flour, milk and egg until well combined.
Stir through the carrots, potatoes, onion and salt.

Heat oil to a medium heat in a large frying. Spoon tablespoonsfulls of mixture into the frying pan. Use the back of the spoon to gently flatten out the mixture.

Cook for 3-4 minutes each side. Remove from the pan and keep warm.
Repeat with any remaining mixture.
