A quick and easy shortbread that is perfect for any occasion! If guests are coming over and the pantry is empty, whip these up in a jiffy for some delicious snacks over a cup of tea.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 12 servings

100 grams margarine
50 grams caster sugar
150 grams plain flour
1 teaspoon of vanilla essence

Preheat the oven to 160 C. Lightly grease some baking trays.

Beat together the margarine and sugar until pale and creamy.

Add the vanilla and beat through.

Add the flour, then beat until combined and a bread crumb-like texture forms.

Press together the mixture with your hands to form a rough dough ball.

Knead the dough ball on a floured board until it becomes smooth.

Use a floured rolling pin to roll the dough to about 5mm thick.

Use a cookie cutter to cut shapes.

Place the shapes onto a baking tray, about 3 centimeters apart.

Bake for 10-15 minutes until light golden brown. Allow the shortbreads to cool on a baking tray.
