Pumpkin, asparagus and lentil curry

This is a low carb vegetarian recipe. Choose brands you like.

Preparation Time: 20 minutes
Cooking Time: 17 minutes
Serves: 2

1 teaspoon olive oil
1 teaspoon minced garlic
1 teaspoon minced ginger
1 teaspoon curry powder
1 brown onion
1 zucchini
1 cup diced pumpkin
1 can brown lentils
1 bunch of asparagus

Put olive oil, garlic and ginger in a saucepan
Dice the onion and zucchini and place in saucepan along with diced pumpkin
Microwave asparagus in 1 cup of water on high for 1min then add it and the water to the saucepan
Add lentils with water in the can to the saucepan and cook on medium heat for 15 minutes.
