Fatless Cupcakes

You can make all kinds of cup cakes with different flavours and toppings, but they all start off with a basic cupcake mixture. This basic cup cake recipe is fatless so does not use any butter. From this recipe you can add your own toppings, I used chocolate and nuts for some, and icing sugar for the others. These are probably just one of the easiest things you can make, so are perfect for baking with the kids. Based on the brands I used, each cup cake is about 53 calories (without toppings).

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Makes: 16 servings

100g Xylitol (or caster sugar if you prefer)
100g plain flour
3 eggs

Pre-heat the oven to 170 ༠C/ 150 ༠C fan/325 ༠F/3 Gas.
Beat the eggs with a handful of flour.
Beat in the sweetener/sugar.
Mix in the rest of the flour.
Pour the mixture into cup cake cases and bake.
