Vegan Sausage Rolls

This is a twist on classic Aussie sausage rolls. These herby mushroom rolls are delicious, filling and just as satisfying as a meat roll, but much healthier!

Cooking Time: 30 minutes
Serves: 16 small rolls or 8 large

1 onion
2 stalks of celery
Splash of olive oil
500 g mushrooms
3 cloves of garlic
1 tablespoon mustard
100 ml white wine
Sprinkle sea salt
Freshly ground black pepper
80 g breadcrumbs or oats
bunch of fresh flat-leaf parsley
2 sprigs of fresh thyme
2 sheets of ready-rolled puff pastry (640g)
t tablespoons Soy milk
2 teaspoons sesame seeds or herbs to sprinkle on top.

Preheat the oven to 200C. Line a baking tray with baking paper.
Dice the onion and the celery. Heat 1 tablespoon of olive oil in a large pan over a medium-high heat and saute the onion and celery. Meanwhile, finely chop the mushrooms.
Mince the garlic and add, stir for a few minutes then throw in the chopped mushrooms.
Once browned add the mustard, wine, salt and pepper, reduce the heat to low and bubble away until the liquid is absorbed - set aside to cool.

Add the cooled mushroom mixture and breadcrumbs to a large bowl, add in the chopped herbs and stir well, season to taste.

Cut the sheets of puff pastry in quarters so you have eight equal-sized pieces. Spoon the mushroom mixture along the middle of one length of pastry.

Fold one of the sides of the pastry up over the filling.

Press the edges and crimp with a fork to seal. Repeat with the remaining ingredients until you have eight long rolls (cut into smaller ones if desired).

Place the rolls on the baking tray, brush with the soy milk and sprinkle with the sesame seeds or herbs.

Place the tray in the hot oven and bake for 25 to 30 minutes, or until golden.

Serve with salad and your favorite sauce!

These can be made ahead of time and frozen.

These are very versatile, use any veggie you like. I have made them with carrots and chickpeas before and they were amazing!

A food processor for the veggies makes these even easier.
