Creamy Garden Salad

The mayonnaise, avocado and boiled egg in this salad make it deliciously creamy. It works well on its own or as a side with grilled chicken, lamb chops or veggie fritters.

Garden salad with creamy mayonnaise dressing

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 2-4

1/2 head of iceberg lettuce
1 celery stalk
2 large radishes
1 large tomato
1/2 avocado
1 carrot
2 eggs
Small handful of dill
Salt and pepper

2 tbsp mayonnaise
1 tbsp lemon juice
1/2 tbsp olive oil

Put the eggs in a pot and cover with water. Bring to a boil over high heat, remove the lid and allow to boil for 8-10 minutes.
Meanwhile, shred the lettuce, and slice the radishes, carrot and avocado. Cut the celery lengthways, then finely slice and remove the core of the tomato, then slice vertically.
Mix the dressing in a small bowl.
Pour the dressing over the salad and season with salt and pepper.
