Marinated Roma Tomatoes

Marinated anything always tastes delicious, and these tomatoes are no exception. They make a really yummy antipasto treat, or go well with pasta, on bread or as a snack on their own.

Preparation Time: 15 minutes
Cooking Time: 60 minutes
Makes: 2 jars

Ingredients
1kg roma tomatoes
1 tbsp balsamic vinegar
1 garlic clove
Olive oil

Method
Preheat oven to 200C (400F).
Cut the roma tomatoes in half lengthways. Lay them out in on a baking tray, cut side facing up. Season with salt and pepper.

Place in the oven for around 60 minutes, or until soft and starting to blacken.

Meanwhile, sterilise a glass jar. I followed this sterilisation method.
Put the tomatoes in the jar/s and fill to the top with olive oil. Seal and store in the fridge. It will keep for a few weeks.
