No Cooking Mexican Egg Salad

This is another great salad that you can have as a meal, and it requires no cooking other than boiling some eggs!

Easy to make, and vegetarian, it can be eaten up to a few days later as well.

I used home made pickled vegetables instead of minced ones but either would do.

Preparation Time: 10 minutes
Cooking Time: 0 minutes
Serves: 2

3 large hard boiled egg, coarsely chopped
About 1/3 cup celery or slightly less
2 tbsp minced pickle or similar
Bit of dry mustard
Bit of crushed cumin seedsPepper
tsp vinegar
Mayonnaise, to taste
Salad greens, optional

Mix all the ingredients except the mayonnaise and salad greens.


Add some mayonnaise to moisten the salad.

Serve on top of some greens of your choice.

I served with my chicken scallopine.
