Festive Red Cabbage

This is a simple recipe to jazz up some red cabbage. The dark red of the cabbage and the slight spicy warmth make is a lovely accompaniment to dark meat or a Christmas dinner.

Festive Red Cabbage


Preparation Time: 15 minutes
Cooking Time:1 hour 30 minutes
Makes: 6 servings

Ingredients
750g red cabbage
1 green apple
1 large red onion
2 cloves garlic
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1 1/2 tablespoons of soft brown sugar
2 tablespoons red wine vinegar
20g butter

Method
Quarter the cabbage
Cut out the core of the cabbage and discard
Finely slice the cabbage and place in a casserole dish
Core and chop the apple then add to the dish
Chop onion and then add to the cabbage and onion
Mix all together
Next crush the garlic and mix with the spices, sugar and vinegar before adding to the cabbage.
Mix well
Cube the butter and place over the cabbage
Cover the casserole dish and place in oven for 1 1/2 hours

There's no great cooking skills required to make this dish. Check it a couple of times during cooking and give it a stir then just add salt and pepper to season and serve.
