Choconut and Pineapple

A tropical concoction of juicy pineapple, desiccated coconut, and delicious melted chocolate. A lovely pudding for a summer's day that probably takes as long to cook as it does to eat. Based on the brands I used, each portion is about 240 calories.

Preparation Time: 5 minutes
Cooking Time: 5 minutes
Makes: 2 servings

1 tin of pineapple
2 tbsp seedless raisins
1 tbsp desiccated coconut
1 tbsp soft dark brown sugar
20g dark chocolate

Drain the juice from the tinned pineapple (you can always pour it into a glass and have a drink of pineapple juice to go with it).

Mix the pineapple, raisins, coconut, and sugar and fry in a pan for about three minutes.
Melt the chocolate and drizzle over the top.
