Caramel Chicken

This is an easy recipe that doesn't take long to prepare. The only thing to watch out for is that you do not over cook the chicken.

It is suitable to heat up another day, and the chicken is also great in sandwiches.

Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves: 3

Ingredients
2 large chicken breasts - I use Mt Barker in WA
1 tbsp fish sauce
1 tbsp coconut sugar
2 cloves garlic, crushed
tbsp soy sauce
Bit of pepper

Method
Using a bamboo steamer on top of a double boiler, or just the double boiler, line this with baking paper.

Cover, and steam over boiling water for about 10 to 15 minutes depending on thickness of chicken. It need NOT be totally cooked, and remember, never to overcook chicken breasts as they become dry.

Make sure the baking paper comes up the sides


Remove from the heat.

Put the fish sauce, sugar, garlic, soy sauce, pepper and 1 cup water in a different saucepan over a high heat.

Bring to the boil, and cook for about 8 minutes or until the sauce thickens slightly.

Put the chicken back in to the pan, turning it to coat it in the sauce.

Reduce the heat to low and cook for a further 5 - 10 minutes. Check it several times as mine boiled dry, and I had to add some more water.

Remove the chicken onto the serving plates, and allow to rest for a few minutes. Slice the chicken.

I made brown rice and microwaved plain cauliflower to go with it.

Spoon the sauce over it, and serve.
