1 large onion
100ml single cream
Large pinch of salt
2 tsp mixed dried herbs
6 tablespoons olive oil
100g grated cheddar cheese
1 tablespoon grated parmesan (optional)
Sweat the onions in the olive oil and then add the chorizo
Whisk the eggs and then add the cream, herbs & salt
Add the extra mixture to a hot frying pan
Grated cheddar and parmesan taste great but you could also try feta cheese
Golden and bubbling frittata straight from the oven
I have a fussy toddler but this was a winner with him this lunchtime. Just remember to go easy on the salt if you are giving this to children or avoid it completely.
This is also a great recipe to do if you need to use up lots of eggs if you have been blowing them for Easter. Why not have a look at MyKidCraft
for egg decorating ideas.
