Curried Sausages

A classic family favourite.

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Makes: 6 servings

Ingredients
12 sausages
2 apples
2 onions
30g butter
4 carrots
1 tbs crushed garlic
2 tbs tomato paste
1 tbs BBQ sauce
4 tbs curry powder
1 tsp chilli flakes
4 cups of water
3 beef stock cubes
1 tbs parsley
4 heaped tbs fruit chutney

Method
Boil sausages in a pot of water until cooked and the skins are beginning to come off.
Drain the water and skin your sausages.
Cut up the onions and sweat in the butter.
Grate your apples and add them to the saucepan.
Peel the carrots and slice them. Add them to the mix.
To the mix, add your curry powder, parsley, garlic and chilli flakes.

Pour in 4 cups of water and add 3 beef stock cubes.
Add chutney, tomato paste and BBQ sauce.
Bring the sauce to the boil for about 10 mins or until the carrots are soft.
Meanwhile cut your skinned sausages into small pieces.
Combine the sausages and the sauce and simmer for a further 20 mins.


Saute the onion, apple, garlic, chilli, curry and parsley

Season with salt and pepper and serve on a bed of rice or mashed potatoes.
