Prosciutto, feta and zucchini fettuccine

A little bit fancy, this dish is very simple and very quick to make. The tart lemon and creamy feta lend the dish a dash of zing, while the zucchini and pine nuts offer a touch of sweetness. Ideal for a mid-week dinner or as part of a dinner party, this dish is sure to impress.


Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
500g fettuccine
90ml olive oil
Finely grated zest and juice of 1 lemon
6 large cloves garlic, finely chopped
2 zucchini, thinly sliced using V-slicer
1 tablespoon dried marjoram
1 tablespoon dried dill
¼ fresh parsley, chopped
2 tablespoons butter
200g feta cheese, crumbled
100g prosciutto, thinly sliced
Pine nuts, lightly toasted
Salt and pepper, to taste

Method
Cook pasta according to packet instructions. Drain and toss with a dash of oil.
Heat olive oil in frying pan over low heat.
Add garlic and stir until fragrant.
Add zucchini, lemon juice and zest.



Ingredients


Cook for about 4 minutes or until zucchini softens. Stir occasionally.
Add marjoram, dill, parsley and butter, and stir to combine.
Add drained pasta and stir to combine.



Ingredients


Toss with proscuitto and feta, and top with pine nuts.
Season with salt.
Serve immediately.
