Ingredients 250 g cooked chicken
100 g cooked turkey
About 100 g chopped bacon (available at the Deli counter at Coles and Woolworths) -or cut up bacon
110 g grated cheese
½ onion, chopped finely
200 g Mayonnaise
75 g slivered almonds
¾ tbsp lemon juice
100 g cream
2 sticks celery, sliced
About 50 g potato chips, crushed
"Pull" the chicken and turkey pieces.
Fry the bacon pieces to your liking, in a fat free pan.
Mix in the mayonnaise, cream, celery, lemon juice and onion, and then add the cooked bacon.
Put in a shallow ovenproof dish -I used Corning Ware - and spray lightly first.
Mix the crumbled chips and grated cheese together
Put this evenly over the top of the chicken mixture.
Bake for about 20 minutes, or until it starts to get golden and crisp - you could add some very fine pieces of parsley for decoration, when cooked.
