Ingredients About 230 g turkey
Bit of oil
2 spring onions, chopped
1 clove garlic
˝ tbsp curry powder
100 g mango, pulped
Extra mango to serve
4 tbsp sour cream
˝ tbsp seeded mustard
˝ cup chicken stock
2 - 3 small potatoes -optional
If using cooked turkey, "pull" the turkey off the bone and pull apart into string like pieces.
Chop up potatoes into small pieces and boil in water till just done -drain.
Put a bit of oil in a wok and add spring onions, garlic and curry powder and stir over medium heat for about one minute.
Put the mango pieces in a blender and blend till it becomes a pulp.
Add the pulp to the wok as well as the sour cream, mustard and stock. Bring to the boil, turn down heat, and simmer about 3 minutes until heated through.
Add the pulled turkey.
Add the cooked potatoes, stir and heat till it is hot.
