Pumkin, Spinach and Feta Pastry Puffs

Introduction - This is a versatile recipe that can be used as a weeknight meal, or as nibblies at a party.

Preparation Time: 30minutes
Cooking Time: 2o minutes
Makes: 4 servings

750 g pumpkin
2 spring onions
200g feta
250g frozen spinach, thawed
2 eggs
4 sheets frozen puff pastry
salad to serve

Preheat oven to 180 degrees.

Peel and cut pumpkin into cubes and finely chop spring onions.

Boil pumpkin in a large pot of boiling water until soft. Drain pumpkin when cooked and place in a large mixing bowl.

Mash the pumpkin using a potato masher or fork.

Squeeze out excess water from the frozen spinach and add to bowl with pumpkin.

Add 1 egg, spring onions and crumbled feta into the bowl and mix well to combine.

Place 1/4 of the mixture onto one half of each of the sheets of pastry, leaving a 2cm border around the outside.

Brush the borders of the pastry with egg and fold the pastry over creating a pocket. Seal pastry by pinching edges together. Repeat this step to make all four pastry puffs.

Brush the top of the pastry with egg.

Bake in the oven for 20 minutes or until golden brown.

Remove cooked pastry puffs from the oven and serve with salad.

To make smaller pastry puffs for a party, simply cut the pastry sheet into 4 before putting mixture on top.
