If you agree that everything tastes better with bacon, then this is the pumpkin soup recipe for you. The perfect "warming" soup for cold winter days, and just as good the next day for lunch.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Serves: 3-4
Ingredients
1 kg pumpkin, peeled, seeded and chopped up (jap or butternut)
1 large brown onion, diced
1 clove garlic, crushed
100 g bacon, diced
1 tbs oil
1 litre chicken stock
1/3 cup thickened cream
Method
In a large saucepan, heat oil to a medium heat. Add the pumpkin, onion, garlic and bacon and cook for 5 minutes until onion is soft.
Add the stock and let the soup simmer for 20 minutes.
Using a blender, blend the soup until smooth. I used a stick blender. Add the cream and stir to combine.
