This salad is sure to be a winner at any barbecue or lunch- I don't even normally LIKE salad, but I can't get enough of this one. It's only got a few ingredients, but sometimes a few are all you need- especially when those ingredients include pumpkin, feta, beetroot and spinach. The best part is that it's super easy to make.
Ingredients 1 butternut pumpkin
1 can of diced or quartered beetroot
1 bag of baby spinach
1 block of feta cheese
Pine nuts and classic salad dressing (to taste)
Dice the pumpkin into small, bite-size squares.
Slice and dice.
Steam the pumpkin until just soft. Set aside to cool.
You can never have too much pumpkin.
In a large salad bowl, make a layer of baby spinach leaves.
Drain beetroot and scatter over the leaves.
Scatter pumpkin on top.
Crumble the block of feta cheese and sprinkle over salad.
Add classic salad dressing and pine nuts, as much or as little as you like.
I'm pretty slow at cutting up the pumpkin, so if you're good at chopping then this salad shouldn't take any longer than 20 minutes. You could add in some chicken breast to make it more filling, but as a side dish it's simple and tasty. Enjoy!
