Pumpkin Paella

Okay, I don't think I'm actually allowed to call this dish a 'Paella' since it wasn't cooked in a proper paellera, but it's quite similar and very tasty.

Exotic, yet simple; Quick, yet easily left to its own devices; this dish is ideal for a dinner party. Plus, you only have to use one pan!

The Paella pictured is vegetarian and made using only pumpkin, but if you're not vegetarian, try adding some chicken or prawns.

Preparation Time: 10 minutes
Cooking Time: 35 minutes
Makes: 4 servings

500g pumpkin, peeled, seeded and cubed
1/2 brown onion, diced
2 cloves garlic, chopped finely
1 cup rice
2 cups hot chicken stock
1 tsp smokey paprika
1 tsp tumeric
1 tsp black pepper

Pre-heat oven to 190 degrees Celsius.

In a large frypan, heat a little oil and gently fry the onion and garlic until the onion softens and browns slightly.

Add pumpkin and stir for 5 minutes.

Sprinkle in spices, turn down the heat and stir until everything is well coated.

Stir in rice and stock, cover and bake in the oven for 20 minutes or until rice has absorbed all the stock.

Serve hot and enjoy.

Easily cooked in one frypan.
